Another vote for the Spyderco Endura, with fully serrated blade. In fact, get two. When one gets dull, send it back to Spyderco with $5 for a basic sharpening, and carry the other one in the meantime.
A full sharpening & reprofiling is $20.

My other daily carry is a SAK Tinkerer.

NOTE: Serrated blades SUCK for skinning animals; although they are great for sawing sternums, ribs, etc.
