Just picked up a Lansky ceramic rod to take camping/keep in the Jeep.
Do these ceramic rods also take the place of a good steel? In other words, do they straighten the edge like a steel does?

The definitive answer is yes and no!
The do everything that an Arkansas stone does but not what a steel (like a file) or diamond hones would...Of course it depends on the severity on the nick.
I had the pocket version in my packbag at all times to touch up filleting blades.
